Summer Squash

This is a great side dish to nearly anything you make. The flavors are mellow so it's not going to overpower the star of dinner. It's subtle but really really tasty.

Summer Squash

1 onion, sliced
1/4 cup of butter
3-4 medium yellow squash, sliced

Saute onion in butter until tender.  Add squash; stir until squash begins to soften. Cover; cook on low 20-25 minutes until squash is nice and tender. Season with salt and pepper.
