Hi! My name is Crystin. I am a "homemaker" in training I suppose. My resume is pretty extensive. I am currently an {okay} cook, a boo boo kisser, a playmate, a jungle gym, bug catcher, butt wiper... I think I'm missing butcher, {I'm not a} baker, and candle stick maker. We will put a pin in that. I am a stay at home mom to two boys and a wife to a pretty awesome husband who thinks I'm pretty awesome too. I love learning new things, tricks, tips, recipes, cleaning technique. I really love being a Home Maker and I am always still learning. I have a strange sense of humor sometimes but I always try to be honest. Motherhood is hard and I am doing the best I can with what I have. A mother's life is dirty, messy, fun, silly, pretty gross sometimes...it's exhausting, enjoyable and all in all, a darn good time.

A thought

It was delerium I suspect that made me think that I have to be "supermom" all the time. In my mind though all I can think about is how many loads of laundry are in the garage or how many dishes are piled up around the sink. Yes, I may not have gotten to that bathroom (still) today or swept up the living -- I did however rescue a Little Person from the clutches of a vicious Fisher Price lion. I drove a pig and horse to school on a bus all the while singing "the wheels on the bus" and making a special toddler very happy. I am coming to the revelation that everything I think is so important is nothing compared to the job I do as a mother, a nurturer, a teacher and a friend to my two babies.

On a different note -- it has been declared that I am a horrible cook. Haha! Yeah, not really kidding. Recipe after recipe I try, my husband doesn't like....But AHA, I made empanadas last night and he really liked them! So I thought I would share the recipe with anyone who might read this blog =)

Empanadas:

1 lb hambuger meat
1 onion
1 clove of garlic
1 can of black beans
salsa
pizza crust or pie crust
Mexican or taco cheese

Preheat the oven to the temp on the pizza crust or pie crust. Cut up the onion and the garlic and add it to a skillet. Add the ground beef and brown. Toss in some salt and pepper to taste. Drain the meat mixture and add to a large mixing bowl. Open and drain the black beans and add those to the mix too.  Pour on enough salsa to coat and then be very generous with the cheese. Mix it all together. Cut out circles from the pizza crust (I used a martini glass if you don't have a biscuit cutter). Add some mix to each circle and close them shut using a fork to score the edges. Place them on a baking sheet, poke some holes in the top of each so they don't explode (it happens) and bake according to the package directions on the pizza crust or until they are golden brown and delicious! I served mine with some Spanish rice I got at walmart... and I was going to make a margarita, which didn't work out so well.  Next time I make the empanadas, I am going to use chicken and add some corn as well! mmm.

I'm Back

2,000 dirty diapers, 2 car seats, several stretch marks and a whole lot of sleepless nights has landed me right back in the blogging seat. Life is so funny.... I am reading back through my posts and how I was scared to death and dreading the upcoming birth of my second child...nearly three months later, I gasp at the thought that I have made it this far! Don't get me wrong, it's wonderful to have another bundle but it's TOUGH! I don't care what other people say... it's TOUGH... Never a moment to yourself... as I type now, I am looking at a chunky little one bouncing happily in his bouncer at my feet sucking on his hands and guessing when lunch will be. I'm tired, cranky, disheveled, hairy (that's right... try shaving when you get to have 2 mins in the shower a day!), and just plain worn out. It's a roller coaster ride of emotions, schedules, planning and just being supermom sometimes...but all in all, it's worth it. I have never been happier although it may seem different when I am cleaning yogurt off the floor, throw up off my back and running to grab my cell phone from a toddler and a curiosity for a fish tank... I am blessed to have my family and I am so thankful.
