I love this recipe for a number of reasons. It's easy, it's cheap, it's a crock pot meal and the flavors are pretty awesome! I made it last night and Jerry and I loved it!
Mexican Chicken
2 lbs of boneless Skinless chicken breasts
8 ounce package of cream cheese, cubed
14.5 ounce can of corn, drained
15 ounce can of black beans, drained
16 ounce jar of salsa
Add all the ingredients to the crockpot and cook on low for 8-10 hours, stirring a few times while cooking.
Avacado Salad
2 large ripe avacados, chopped
1 cup chopped red onion
1/2 lime, juiced
1/4 cup chopped cilantro
1 large ripe tomatoe, chopped
(I also added some garlic salt and some pepper)
Mix all ingredients together, chill in fridge until ready to serve.
